Vegan Sushi Roll Snack Recipe| Salsa Sushi Recime

image2 (1)What do we do when we want a salty snack late at night?  Well, we should just have a glass of water and get our butts in the bed, but we indulge in something crunchy, fatty and probably processed–what is it about late at night junk food cravings?  I’ll save that for another day, I want to focus on this little nutritious snack option for late night sushi inspired cravings:

1 Sheet Nori seaweed sheets

1 plum tomato

couple leaves of cilantro

1 small cucumber

*Note: No rice in this recipe.  I’m snacking late and am slightly hungry, but don’t want to tax my body late at night with the chore of digesting anything other than hydrating plant based goodies.  This will make sure I am satisfied, nourished, and will sleep a little more soundly.

My process:

All I did was slice up my produce as finely as I could and gently laid them on my seaweed wrap.  I used the tomato juice to get the nori nice and moist and adhere to the other side.  I could not help myself and dressed it up with a little drizzle of sriracha sauce, smh.  Why this crack/crap/condiment is in my cabinet still–only my subconscious knows.  Well, actually, I take that back, I know why–it’s delicious.  I love it when I’m eating anything Asian inspired that involves seaweed, ginger, or even tahini.  I can also find a reason to spice something up.  Maybe it’s because I’m a fire sign and just love my cardinal energy?  Or I just like spicy foods.  I think both are true.  I didn’t add any salt or spices, I just allowed the fresh fruits and veggies to embrace my pallete with it’s natural essence.  I am so glad I did too.  The nori had just enough salt to compliment the fresh bite of cilantro, the smoothness of the avocado, the plump and juicy tomatoes, with the last but not least cool, juicy pop of the cucumber.image3

What late night treats do you whip up when you are trying to be conscious of what your eating?  Or do you even care late at night and just give in to your desires?  I give in too, a lot…I did tonight, just in a more creative, healthy way.

    Good for you for staying satisfied yet out of trouble.
    My late night cravings only occur and weekends because those are really the only weekends I’m out late enough to get hungry.
    And on those occasions I’ll come home at like 4 in the morning and have a bowl of cereal or if it’s earlier at like 2 a.m. I’ll have some popcorn.

    This is not because I’m trying to be healthy let’s just make that clear, this is because I don’t have any junk food in the house and these two are the only items I’m left to resort to lol.
    Sad, I know, I live this every weekend ??
