Mmmm Sweet Pot…

Sweet potato that is, hahaha, gotcha!   I’m sure the other is sweet to many, but this post is about my beloved root vegetable, the sweet potato baby!  This vegetable holds a sweet spot in my heart for so many reasons and to save you from becoming a victim of my rambling I’ll try to keep it short and “sweet.” 🙂

As a child, I loved the smell of my mom baking sweet potato pies during the holidays or any time we just wanted one.  I still love mashed sweet potatoes with all the cinnamon and sweetness my plate can hold.  Sweet potato casserole with a nice topping of nuts, spices and sweetener of your choice.  The popular sweet potato fries are so much better than plain old white potato fries that NEED salt, ketchup, mayo, pepper, anything to add some flair and flavor.

So yes, there are many ways to eat this precious root, but how about drinking it?  When many people think of juicing, they think greens, or citrus, or the popular carrots and apples, but fail to love the underestimated sweet potato.  This heavenly veggie is packed with a slew of vitamins, and cancer fighting power, this really should be one of the first things we think of when it comes to juicing.

They are a good source of Calcium, Potassium, Beta-carotene, Vitamins C, E, A and plenty more types of awesomeness, but I will stop there to keep from blowing your mind too much, plus I’m no nutritionist, just a blogger.  Just do yourself a favor and drink up this magical veggie.  I’ll post some ways to incorporate this sweet and colorful juice to share how I indulge in it, and hopefully it will inspire you to do the same.
