Apple Quinoa Breakfast Bowl

At first glance one would this that this skillet breakfast (or anytime treat) is all about the cooked quinoa, with the cooked apples bringing it in the background.  However this dish is really all about the apples and the taste that it developed based on how it reacted to the heat, spices, and the amount of time it cooked.  The quinoa is the fiber, the protein, the staple that stands it’s ground and stamps this dish as vegan, ancient grain, plant based protein.  The two main ingredients are great by themselves, but when working together, a plant based, sweet, grainy, fibrous union is born, serving your body in so many ways.

full moon b dayMaking this today made me think of sun and moon signs.  A persons sun sign at first glance seems to serve as our ego stamp–who we are in a nutshell.  The moon sign however, is our inner self, our intimate character, and also the one you may not be thinking of when you open up the paper (or app nowadays) to read your daily horoscope.

imageWhat the heck am I talking about? Here is the recipe for any who are interested:

Ingredients:

  • 1 apple of choice, peeled and chopped/diced
  • spritz of lemon juice
  • 1-3 tbsp of coconut sugar (or any sugar, liquid or granulated)
  • spices of choice (cinnamon, nutmeg)
  • 1/8 tsp vanilla extract
  • 1/3 cup quinoa
  • 2/3 cup water

How to make it happen:

On medium heat, add to your skillet the deliciously diced apples, squeeze your lemon wedge all over it, and sprinkle you sugar and spices on top.  Combine and patiently wait for tall of this to marry together.  Now add your water and quinoa and mix together.  Cover and let simmer on low-medium heat for about 15-20 (until most of all of the liquid is gone).  Take of the top and reveal to your senses a warm, comforting dish of cooked apples accompanied by plant protein powerhouse, quinoa.  I decided to add a crunch to this soft and charming bowl with a sprinkle of chopped almonds and walnuts.

imageI went overboard a little on the nuts, but luckily there was some leftover for me to enjoy it again, with a better balance of the crunch.  This is great served fresh, right out of the skillet or as leftovers.  I wish I had coconut whipped cream to add to the top–that would have been amazing!

What a super stimulating Sunday I have had!  Phew, but we made it out alive with a few laughs, Boyz II Men classics and giggles shared between my Mami and Aunt B.  I’m glad to be here right now, with you all.  This is posting a little late, but I still consider it a win in my 21 day challenge!
