Almond Milk Recipe – Beware it’s Delicious

I was going to start this post off with telling you how important it is to drink almond milk and how it’s better than cow’s milk and blah, blah, blah–womp womp!  I don’t have time for that right now because I am busy guzzling down my delicious non-dairy potion!  I’m vibrating on an almond joy frequency that I never want to fall off of, so I keep drinking, sipping and enjoying the aroma of sweet almonds and vanilla.  I keep closing my eyes and allowing the naturally creamy, smooth texture massage my taste buds, not tickle–this milk is not playing around.  If you loved almond milk before, prepare to put a ring on this one.  If you loathed almond milk prior to today, get ready to eat crow with a tall glass of this cruelty-free leche.  I had no idea I was missing out on such an experience.  It feels as if a star of natural non-dairy ecstasy has entered my mouth with one gulp, and exploded into ten million more stars upon it’s arrival to my tongue.  OOPS!  sorry I started taking it to a grown woman place, pardon me and my sweet banter.

If you can’t tell, I can not get over how delicious this almond milk is that I am sipping on right now.  If it is possible to have a non-dairy milk hangover, I think I have one coming–it’s just that good.  I can’t believe it has taken me this long to make it, all thanks to my lack of cheesecloth, but it’s okay, my patience has paid off.  I had the following epiphany: I make the best almond milk on this beautiful planet!  I don’t have to stand on this pedestal alone, please join me with this delicious and simple recipe–won’t you friend?

Warning:  this milk does not begin to compare to the store bought versions.  If you thought those were good, wait till you create your own!

4 cups of distilled/filtered/spring water (i.e. drinkable)

1 cup of soaked raw almonds (not toasted/roasted)

1 teaspoon of vanilla extract

6 Dates

*Pinch of salt (not refined, go to the Himalayas people!)


My process:

Prep it (optional, but recommended)

I’ll cover all the benefits and reasons why it’s important to soak and dehydrate your nuts another time.  Like I said earlier, I don’t have time for that right now, I need to focus on my non-dairy cocktail hour.  Just know that it is highly recommended that you soak your almonds in filtered water for about 12 hours/overnight.  Just cover them in water and put them in the fridge while you enjoy a good nights sleep–tomorrow, you have a date with non-dairy ecstasy.  After they have swelled and soaked, drain and discard the water.  Now they’re ready 🙂

Blend it:

In a high speed blender, add your water and dates first, to let them plump up a little while you get your other ingredients together.  Next, add the rest and blend away.  Blend up to high and let it run for just a minute or two.  You’ll see it doesn’t take long.  I don’t recommend letting it run so long that it starts to heat up–no bueno.

Strain it:

Now place your Cheesecloth or nut bag over a big bowl (preferably with a spout) and pour it through.  You will need to squish, squeeze and nurture the liquid out.  After all the liquid has been squeezed out, you can discard or recycle the almond pulp.  The pulp can be dehydrated and used as almond meal, or used in recipes for added fiber, bulk with a splash of nutrition.

Enjoy it!

Drink it!  Close your eyes and reflect on how easy this process was and visualize the color orange, it’s warmth and your sacral chakra awakening.  whoops, off the deep end I go again–sorry (not).  All jokes aside, please enjoy this recipe, pat yourself on the back for making it and realize that you have the power to create anything–even bangin’ almond milk.

That’s it!  Once strained you have a beautiful, delicious batch of almond milk that can last 3 days in the fridge, but it may not last that long. Today, I had to make two batches in a row cause it was that good.
