The Easiest Cookie Recipe Ever

I love baking cookies.  I hate always having to refer to my recipe book, especially when said recipe book is on a boat, being shipped to a brave new world.  This is why it’s great to have your own blog, because it serves as a rolodex of memories and things that I want to refer back to.  What do you look for in a good cookie recipe?  I like ones that are flexible, where the ingredients are interchangeable and allow for a tweaking, substitutions.
