Easy Ice Cream | Dairy Free Vegan Wishes Granted

Ice cream comforts you when you’re sad, tucks you in at night as you cuddle up with a movie and blanket, and is by your side during celebrations of life, or birthdays.  The chilly scoops can lead to first kisses, sweeten a sour date-night,  heal heartbreak, and deepen friendship bonds.  I love ice cream (sigh).  I also love being vegan, which, unfortunately, means that my chilly love affair with ice cream had to change to a sorbet soiree.  Sorbet is yummy, but I still longed for the creamy, cool comfort of vanilla and chocolate amidst an avalanche of cookie dough, mint chips, or ribbons of caramel.  Yes, there are vegan ice creams on the market today, and some are delightful (especially the So Delicious cookie dough), but I have now learned that even these state of the art, vegan-cruelty free creations don’t compare to homemade ice cream.

Homemade ice cream has always intimidated me.  Until today.  My Husband recently surprised me with an ice cream maker.  Funny how as you get older, the things that bring you joy change.  If he would have came home with jewelry, new boots or a fancy bottle of champagne about 8 years ago, I would have melted all over him like chocolate fudge on a sundae.  These days, a Kitchen Aid accessory revs my engine and gives me reason to just make and eat my own chocolate fudge.  It’s official.  My Husband really loves me.  He didn’t just take me out for ice cream, he gave me the power to create ice cream.  Thanks Babe 🙂  I will not use this power wisely, but recklessly–unleashing my magic wand to churn out creamy bowls of sugar, cream and smiles.  I will not rest until my power has manifested a vegan version of all of my former favorite ice cream flavors.  

Ingredients:

  • 2 cans of refrigerated coconut milk
  • 3/4 cup of sugar
  • 1 tsp of Bacardi rum (optional)
  • 1 tsp of vanilla or scrape off fresh vanilla bean, or both!

Blend all of your ingredients together, quickly (less than a minute).  Turn on your ice cream maker and add your chilled mixture.  Let your ice cream maker run for 25 minutes, or according to your maker’s instructions.

Don’t dare use anything other than FULL FAT coconut milk.

That’s all I did.  That’s all it took to make several bowls of smiles.  I added a little of my Husband’s Bacardi because I read somewhere that alcohol helps to keep the dessert from freezing rock hard.  I’m glad I added a little because the last thing I want to do is wait for my ice cream to thaw out.  I don’t have the patience to let it sit on the counter.

To all of you beautiful people who love ice cream, PLEASE do yourself a favor and invest in an ice cream maker.  Making one of my most favorite things in the world today was such an enjoyable experience.  I was so proud of myself for some reason.  I’m hooked now.  Having the power to grant my own sweet and creamy wishes just transformed my life.  I am no longer at the mercy of my grocery store selections, but am free to whip up my own vegan, frozen creations.

Excuse me while I go enjoy another bowl of my coconut, creamy, cold bowl of bliss.
