Choc-guacate Pudding Recime: Deeeelish DIY Disaster

DSC00963My children love creamy stuff and chocolate–sooooo light bulb!  Why not serve them a bowl of vegan pudding that is made of avocados, and looks like poop?!  Doesn’t that sound yummy and exciting?!  I had to top this treat off with some sprinkles (not so healthy) in an effort to save the hideous appearance of this delicious and nutritious dish.  I was overcome with joy and so motivated to continue my veggie journey when I saw my two little kings dive into this bowl of avocado masked as chocolate pudding.

Avocado is a good fat fruit that is great for the brain.  I love feeding this to my children because their brains are precious to me (duh!).  I try to take every opportunity I can to enhance their health and well being with a “clean little secret” and sneak nutrition in there.  My tiniest royal guy actually put this desert together for me.  My oldest waited patiently with a smile and cheered me on as the food processor whipped up his chocolate magic.   He was also smiling because his Mommy couldn’t help but to shake her veggie hips and sing “¡Adelante aguacate, nos encanta chocolate!”. Yes, I know I am a hot mess, and that probably didn’t make much sense.  Point is, I made my boys laugh, dance and enjoy a big bowl of avocado brain food!  Here’s how we did it:DSC00966


*This is a DIY Disaster because my avocado wasn’t as ripe as I would have liked, and it would have been better to DSC00972 use two instead of one, it would have blended much better.  The measurements are completely approximate, so if you try it, I say the amounts I have here are a good starting off point, then let your taste guide you 🙂  Better yet, search the web for an actual recipe 🙂 *

Ingredients:

  • 1 Aguacate/AvocadoDSC00968
  • 1 heaping Tbsp. Cocoa powder to start (or carob if you’re into that)
  • Drizzle of agave
  • Teeny-tiny, itty bitty pinch of salt
  • 3 Dates (or more depending on sweet tooth)
  • Possibly a tablespoon or two-three-four, of almond milk if you want a thinner consistency

How we did it:

My honey bun put everything in the food processor and I whipped it up.  I checked the taste to see if  I wanted to add more chocolate or more agave for a sweeter taste.  I withheld the pinch of salt for the very end.  A little salt really helps with my chocolate treats, but it’s not necessarily needed.  I ended up adding some almond milk to make it a little thinner, and like I stated earlier, it would have been MUCH better with a riper avocado, and more avocado.

DSC00973I used a frosting dispenser in an effort to present them with a bowl of delicious chocolate ribbons.  This was an epic fail seeing that I used the wrong tip and make it look like a perfect pile of soft poop!  Yuck!  I thought for sure, my oldest son would giggle and then turn his nose up to this “sh!tty” looking desert lol.  However, my boys LOVED it, so I loved it!  I used to eat this by myself late at night before I had kids to quench my thirst for chocolate.  It feels really good to be able to share this now with my guys, and to see their smiling, messy faces.

DSC00976Lesson Learned: Not everything that looks like crap, will taste like crap…but if it smells like crap, it’s probably crap.
